This is how through a simple bottle, we can make a beautiful discovery (La Découverte), feel like travelling, being moved into a memorable bucolic walk (La Balade) or rather bacchanal, have the sensation of going a long way (Le long Chemin) to achieve a taste buds happiness.

So to share a nice moment, let’s look for a simple and true pleasure!

Aurélie Vic passionate oenologist, discovers and shares Languedoc good vinous leads. The region is big and the wines have multiple flavours and profiles. Must they be fresh and tasty? Must they go with Mediterranean cooking? Of course, but Aurélie wants more. Character and balance, delicate taste and harmony, wine must express and reveal its origins. Anyways, its roots must talk and link us to the soil… its juice must release Southern flavours, a fruit concentrate and a garrigue perfume, with crispness, fine taste and drinkability of course.

La Découverte Picpoul de Pinet

On the edge of the pond of Thau, not far from the Pinet village, we get submerged by a southern landscape = a limestone plateau between pine forest and garrigue for the happiness of Picpoul grape. A local one, undeniably. Aurélie Vic wanted it amusing but serious, a Picpoul that we don’t forget, a beautiful discovery…

Stretching along the Thau Logoon to the west of the Mediterranean's Golfe de Lyon lies the largest white wine producing area in the Languedoc: the Picpoul de Pinet terroir it consists of a triangle bounded by Agde, Pézenas and Sète: a limestone plateau basking in the rising sun covered in highly perfumed garrigue, rows of vines, and scattered pine groves.
An air of holidays? This is an expressive and very fine nose, white flowers and citrus fruits. The mouth is one of a kind, between fullness and liveliness, tasty with lemon peel flavours.

Harvest : Mechanical vine age: 30/35 years, late picking.
Yield : 50 hl/ha (on average)

At table : A nice southern wine for oysters (from the Thau Bassin preferably !), fishes with spices even stuffed courgettes with fresh goat cheese… Yummy !

La Découverte Languedoc Rosé and Red

(AOP Languedoc)

Between the sea and the garrigue not far from the village of Omaison in Aude, Syrah, Grenache and Cinsault vines blossom in an arid and deep soil.Tradition al winemaking, gentle extraction: Aurélie Vic looked for areal Southem fruit wine, structured and supple… Here you are! lt’s a first step, a discovery.

Languedoc Rosé

A treat! A nice pink colour, cherry and crushed strawberry nose. The mouth
is tonic, gourmand texture on mature pomegranate aromas, then tender garrigue scents, light thyme, a bit of redcurrant and lots of delicacy.

Languedoc Red

What a juice! A very beautiful colour with a red cherry tint. An appetizing nose, fresh and complex where blackberry jelly and black plum mix together. It’s a Mediterranean wine rightly exposing its splendor. The palate awakens the taste buds, crunchy, tonic and fleshy. What a delight…

At table : No bluff, this wine is a winner to share with legs of lamb with herbs or with a tartare steak and a pink peppercorn mesclun.

La Balade

Let’s go for a walk!

Come and see, nature is beautiful. Auélie Vic takes you for a walk through 3 magnificent Languedoc vineyards. Between Orb and Vernasobre, Bizes Minervois and Oupia, Montpeyroux, lots of elements bring them together, but each of them are proud and cultivate their difference. The link is the climate and the grapes, the difference is the soil and men. These wines are to be tasted like a discovery course for the curious.

Saint-Chinian, a land of wines !
(AOP Saint-Chinian)

The vineyard is spread on both sides of the Orb and leans against the Caroux and the Espinouse massifs. In a warm and dry climate, shists (at the North) and limestones (at the South) give the best welcome to the vine where Syrah mainly grows amongst other grape varieties of the appellation (Grenache, Cinsault, Carignan, Mourvèdre and Lledoner Pelut)

Distinguished, this wine perfectly expresses the St Chinian soil. A deep colour with nice dark violet reflections. A nose of sweet spices, fine garrigue nuances (thyme, rosemary) and wild strawberries fragrances. The mouth is elegant, round and certainly tasty… Just wonderful.

Minervois a large and natural amphitheatre

Taking the vines road from the North of Carcassonne, we hit the "promise land" and discover an astonishing and preserved nature which is treasure to the vineyard.
It's a Mediterranean soil per excellence, bathed in sunshine, which enjoys the "mare nostrum" breezes. It combines the main Languedoc grape varieties with a little preference for the Syrah.
A generous wine. Here’s one who does not hide its personality, and that from the begining ! A dark colour with a sustained purple announce an explosive nose of blackcurrant and candied blackberry, then subtle degrees of garrigue flavours. The mouth is rich with a very nice fullness, balanced and a warm ending.

Montpeyroux , a vineyard runs throught it...

Amongst the freshest Languedoc vintages, Montpeyroux is advantaged by it's location near the Mont Baudile and the Serrane Massif. With the Southern accent, in this clay-limestone soil, vines grow between oaks and garrigue. It is a wonderful Syrah and Mourvèdre playground...
Freshness and delicacy with a bright colour and a red cherry tint. The nose is full of sweetness where raspberries and fresh strawberries mix together with original prunes and tender liquorice scents. In mouth it’s a ripe fruits business, with richness, juice and complexity. Organic wine.

Le Long Chemin Limoux White and Red

Here we are south-west of Carcassonne, in the Aude highlands, not far from the village of Saint Hilaire. Quite a unique place, located between 100 and 200 m altitude, where the hillside, the woods and the st one unveil the landscapes, the wines and the souls…

Here, Aurélie Vic stumbled upon countryside with a myriad of one-of-a-kind aromas and fragrances, flavours and characters: an exquisite concoction to excite the senses revealed in this wine.

Limoux White

An ever-so seductive profile! Aged in brand new barrels, you will sense an initial intense brioche nose. Then, as these first aging aromas begin to fade away, you are hit by a medley of white and yellow fruit accentuated by a hint of fresh hazelnut. The full-bodied, fleshy, intensely flavoured palate is a celebration of delightful indulgence.

Vinification : New barrels or 1/2 wines barrels. For 8 month on the lees.

At table : In essence, a first class wine that would definitely exalt refined delicacies: ember-baked sea-bream in a fig-leaf papillote, or free-range chicken sprinkled with morels... let the dream become reality !

Limoux Red

Vines have been grown in the Limoux region since ancient times. They are mentioned in texts dating back to the first century. The region is also prestigious in that it was in Limoux, at Saint Hilaire Abbey in 1544, that Benedictine monks discovered the principle of secondary fermentation in the bottle, which ultimately led to the production of sparkling wines. And so, historically, Limoux was the first wine in the world to contain bubbles. When it comes to still wines, its history is more recent.

Grape : 45% Merlot / 15% Syrah / 15% Cabernet Franc / 10% Grenache Noir/ 10% Cabernet Sauvignon
Soil : While closer to the Mediterranean, Limoux's climate is also affected by oceanic influences.
Vinification : The vinification process consists of destemming, followed by maceration and then ageing in barrels on fine lees (the barrels are made by the Radoux Cooperage with oak from the Tronçais forest) until 1 May in the year following the harvest.
Service temperature : At room temperature.
At table : To experience this wine at its best, serve with a richly flavoured dish, such as a leg of lamb cooked for seven hours. A perfect dinner for friends !

Le Long Chemin Terrasse du Larzac

Take a walk through this long path… Underneath the Larzac, not far from the Mont Baudile and the village of Saint Jean de la Blaquière, we come to the North East of the Hérault department. Here nature is wild, paths are long and steep with a typical geology where vines of Syrah, Grenache, Cinsault and Mourvèdre grow amongst ruffes at 100 meters high and schists up to 400 meters high. Aurélie Vic found there richness, finesse and freshness: a gauge of success for this Sunday wine.

Terrasses du Larzac, an exceptional vineyard, at the foot of the mountainous plateau of the Larzac.
Between hills and terrasses, the vine grows in a landscape of schists deep soils, sandstones, rounded pebbles and clay-limestone. The climate is fresh and sunny, it's the transition between the Mediterranean and the Larzac.

A reference, an achievement… A bright, deep and very beautiful colour. Very rich nose, intense, black fruits notes and sweet spices refreshed by eucalyptus and pink peppercorns nuances. The mouth is full and opulent with a tannic and velvety basis and a persistent ending… A sensation of fullness to share straight away.

Le Long Chemin Pic Saint Loup

This legendary terroir, between the Mediterranean and Cévennes, lies outside the city of Montpellier stretching towards the Languedoc foothills. Here nature reigns supreme. Garrigue scrub flourishes on dry yet cool soils, dominated by the magnificent and renowned “Pic Saint Loup” mountain, a rock which climbs to over 650 m. Aurélie’s native Cévennes is beckoning. This spot is unique in Languedoc, owing to its distinctive climate (between a continental and Mediterranean climate, at the base of the Cévennes foothills and not far from the coast) and its Syrah terroir made up of hard and soft limestone. The ideal land for winegrowing!

Discover this blend where Aurélie has chosen Syrah to prevail, discreetly complemented by Grenache, Mourvèdre...with just a hint of Carignan. Deep on the nose, flavours of fresh garrigue, thyme blossom, blackberry and blackcurrant provide an array of fine and subtle aromas. Everything comes together in the mouth with dark sour cherry and liquorice, enveloped by a velvety texture. A long-lasting journey of aromas…

Vinification : Traditional. A destemmed harvest except for Carignan. Maceration for 18 days with regular pumping over, rack and return and punch-down processing to ensure optimal extraction of colour and tannins.
Service temperature : At room temperature. 16-18 °C.
At table : Serve alongside a delicious shoulder of lamb with herbs for a match made in heaven. Carpe Diem!

Rêve d’un jour

(AOP Côte du Roussillon Village)

Roussillon is the southernmost vineyard in France, tucked between the Mediterranean and mountains on the edge of Spain. This is where Aurélie Vic concocted a wine with personality near the village of Maury, in a “dream amphitheatre” with a sun-drenched climate. A bold choice celebrating body and fruit. “What more could you want?”.

Rêve d'un jour
(AOP Côtes du Roussillon Village)

Grenache is such stuff as dreams are made on! That's right, Aurélie made it a reality one happy late summer day in Catalan country: a complex wine full of heart! A daydream, but this one is real... Its deep colour brings red and dark berry aromas to life (wild strawberry, cherry, sour cherry). The full and creamy mouthfeel moves into a complex lingering aftertaste with juicy body.

Aurélie wanted more. A greater richness, body and depth while retaining both balance and finesse: an equation not so easy to achieve. The aim? To create smooth, generous and fleshy contours. But with her experience, excellent blends and a little …inspiration, we got there! A perfect way to appreciate the wonders of the Minervois terroir.

Inspiration

Tremendous power and subtle fruit aromas! Delightful nose, with a rich bouquet of mocha, cocoa, and blackberry jam. Syrah, Grenache and Mouvèdre combine to offer a complex, harmonious palate, supported by refined tannins with notes of pepper, blackcurrant and tapenade. A remarkable balance between concentration, fluidity and freshness. A truly great wine.

The region is also prestigious in that it was in Limoux, at Saint Hilaire Abbey in 1544, that Benedictine monks discovered the principle of secondary fermentation in the bottle, which ultimately led to the production of sparkling wines.

And so, historically, Limoux was the first wine in the world to contain bubbles.

La Balade, Blanquette
(AOP Limoux)

Vines have been grown in the Limoux region since ancient times. They are mentioned in texts dating back to the first century. The region is also prestigious in that it was in Limoux, at Saint Hilaire Abbey in 1544, that Benedictine monks discovered the principle of secondary fermentation in the bottle, which ultimately led to the production of sparkling wines.
And so, historically, Limoux was the first wine in the world to contain bubbles.

Grape : 90% Mauzac / 7% Chardonnay / 3% Chenin
Residual sugar : Extra brut
Soil : While closer to the Mediterranean, Limoux's climate is also affected by oceanic influences.
Production: Blanquette de Limoux is vinified according to the "traditional method". After an initial alcoholic fermentation, the wines are blended and aged in vats for a year, which is exceptional for the appellation. The wine is then bottled. A secondary fermentation is then started in the bottle by the addition of a "liqueur de tirage" (a mixture of wine, sugar and yeast). The wine thus becomes effervescent as the bottles mature on the lees for at least two years, the second exception in the production of Balade, giving the wine a natural sweetness. During the maturing period the deposit in the wine gradually collects in the bottle's neck, in a process called "remuage". This is
removed by "disgorgement", in which the bottle is briefly opened. Lastly, before the bottles are sealed with their final cork, a light "liqueur d'expédition" is added which gives this Blanquette its dry character (barely 4 g sugar/litre).
Ageing: Maturing in vats for 12 months. Maturing in racks for at least two years.
Service temperature : Chilled.
At table : A langoustine fricassée with a dash of lemon, and you will have all the ingredients for a perfect evening.

La Balade, Crémant

The region is also prestigious in that it was in Limoux, at Saint Hilaire Abbey in 1544, that Benedictine monks discovered the principle of secondary fermentation in the bottle, which ultimately led to the production of sparkling wines. And so, historically, Limoux was the first wine in the world to contain bubbles.

Grape : Chardonnay 90% / Pinot noir 5% / Mauzac 5%
Residual sugar: 0g – Brut nature - 0 Dosage
Soil : While closer to the Mediterranean, Limoux's climate is also affected by oceanic influences.
Production: This Crémant de Limoux is vinified according to the "traditional method", with a different selection of grapes and plots from its sister, La Blanquette. After an initial alcoholic fermentation, the wines are blended and matured in vats for 12 months. The wine is then bottled. A secondary fermentation is then started in the bottle by the addition of a "liqueur de tirage" (a mixture of wine, sugar and yeast). The wine thus becomes effervescent as the bottles mature on the lees for at least two years, giving the wine a natural sweetness. During the maturing period the deposit in the
wine gradually collects in the bottle's neck, in a process called "remuage". This is removed by "disgorgement", in which the bottle is briefly opened. No "liqueur d'expédition" is added to this Crémant (there is no residual sugar!)
Ageing: Maturing in vats for 12 months. Maturing in racks for at least two years.
Service temperature : Chilled
At table : Accompany with a lightly-cooked tuna steak, sweet potato purée, some good friends... and enjoy the simple pleasures of life !
